At room temperature, L-glutamic acid typically exists as a white to off-white crystalline solid with a slightly acidic odor. It is moderately soluble in water and exhibits limited solubility in organic solvents such as ethanol and ether. The compound is thermally stable under ambient conditions, though it may decompose at elevated temperatures, releasing nitrogen- and oxygen-containing fumes.

1. Used for pharmaceuticals, food additives, and nutritional fortifiers
2. Used for biochemical research and in medicine, it is used for preventing hepatic coma, preventing epilepsy, alleviating ketouria and ketosis.
3. Salt substitutes, nutritional supplements, and flavorings (mainly used for meat, soup, poultry, etc.). It can also be used as a preventive agent for the formation of magnesium ammonium phosphate crystals in canned seafood such as shrimp and crab, with a dosage of 0.3% to 1.6%. According to the regulations of GB 2760-96 in China, it can be used as a spice.
4. L-Glutamic acid is mainly used in the production of monosodium glutamate, spices, as well as as as a salt substitute, nutritional supplement, and biochemical reagent. L-Glutamic acid itself can be used as a drug, participating in the metabolism of proteins and sugars in the brain, promoting oxidative processes. The product combines with ammonia in the body to synthesize non-toxic glutamine, reducing blood ammonia and alleviating symptoms of liver coma. Mainly used for treating liver coma and severe liver dysfunction, but the therapeutic effect is not very satisfactory; Combined with antiepileptic drugs, it can also treat epileptic seizures and psychomotor seizures. Racemic glutamic acid is used in the production of drugs and also as a biochemical reagent.
5. One of its sodium salts, monosodium glutamate, is used as a seasoning, and its products include monosodium glutamate and MSG.
6. White or colorless scaly crystals. Slightly acidic. Density 1.538. Sublimation at 200 ℃. Decompose at 247~249 ℃. Slightly soluble in cold water, relatively soluble in boiling water, insoluble in ethanol, ether, and acetone. Can treat hepatic coma.
